A pasta made entirely of… lobster

What makes this dish unique is the fresh, artisanal pasta , made entirely with lobster meat. A rare, noble dough that expresses our desire to experiment while remaining faithful to quality. Inside, a creamy lobster and shrimp filling , wrapped in a thin, fragrant pastry. The tortello is then topped with a perfectly prepared shellfish sauce , with homemade bisque and Mediterranean aromas.

Visible processing, guaranteed freshness

Each tortello is made in our open-plan kitchen , so guests can watch the process. After processing, the dough is chilled to -18°C and sealed to ensure maximum hygiene and preserve all its organoleptic qualities until serving.
